Mediterranean Stuffed Artichokes Recipe

Did you know that some of the vegetables that many ditch away have the highest nutritional value. The Artichoke, for instance is one of the healthiest vegetable out there? This odd looking vegetable originates in the Mediterranean regions and it has been used for centuries. Some of the nutrients found in the artichokes are potassium, magnesium, folate, riboflavin, thiamin, zinc, niacin, fibre and several vitamins including C, K and B6. There are many studies which shows that the artichoke has many health benefits. Many of the nutrients found in the artichokes may help lower blood pressure, cholesterol  and control diabetes. Other nutrients may help to reduce bowel irritation, improves the digestive system and beneficial for a healthier liver.

No need to get scare by this pointy vegetables. It can taste delicious when cooked right. There are various ways in cooking and there is indeed plenty of easy recipes out there.

Stuffed Artichokes – Mediterranean Style

  • Large can Tuna
  • 1 pkt frozen broad beans skin removed
  • 2 cloves garlic
  • 4 tablespoons capers
  • Salt & Pepper
  • 2 Artichokes
  • Parsley
  • Black olives
  • Breadcrumbs
  • olive oil
Mis all the ingredients together and fill the Artichoke. I also use the stem of the Artichoke take of all the hard bit then chop small. Place some baby potatoes and then steam till nice and soft about 1 hour. You have now a great healthy, which is cheap and full of healthy benefits.
