Rabbit with Mustard & Herbs 🐇
Have you ever tried to cook rabbit? It is simply delicious when cooked right. It is also one of the healthiest meat to eat, as it is high in protein and low in fats. I have made a very easy rabbit dish that anyone can cook, so try it and let me know what you think!
Ingredients – Rabbit with mustard and herbs recipe
- 1 Rabbit cut in pieces
- 4 Tablespoons olive oil
- 175ml dry white wine – Chardonnay, Gavi, Chenin Blanc, Sauvignon Blanc etc. Cook with good wine if you want the food to taste great!
- Fresh lemon juice (1 lemon)
- 1 Spring of fresh rosemary
- 2 Fresh Marjoram leaves
- Fresh Parsley
- 2 Crushed Garlic Clove
- 1 Spring onion
- 1 Bay leaf
- 2 Tablespoons of strong mustard
- Salt and paper
Method – Braised rabbit with wine, garlic and herbs!
Brush the rabbit with some olive oil and season it well with salt ad pepper. Heat the remaining olive oil in a pan and add the pieces or rabbit. Cook it on medium heat, turn frequently and braise the rabbit until brown to seal the meat. Pour in that delicious wine and the freshly squeezed lemon juice, and feel free to have a sip of wine while you’re at it 🙂
Season it with ore salt and pepper to your liking and add the rosemary, marjoram, bay leaf, chopped parsley, garlic and spring onion. Reduce the heat, cover it and let it simmer for 50 minutes. Mix 1 tablespoon of mustard in hot water and pour it into the pan. I personally prefer Dijon mustard. Let it cook for another 10 minutes until the sauce thickens. remove the bay leaf and serve it with mashed potatoes!
