How to make Maltese bread π

My name is Joan Caligary and I was born in Australia. My parents migrated from Malta to Australia after the war, and I still value my Maltese roots. I lived in Malta for a number of years, and one thing I’ll never forget is that crunchy and delicious Maltese bread. Have a look at the recipe below! I hope you enjoy it as much as I did!
Ingredients
800 grams plain flour
1 table spoon dried yeast
1 table spoon salt
500mls warm water
Method
In a stand mixer place all ingredients and mix well
Constancy will be sticky but will hold together
Cover with tea towel and place in a warm spot to proof
Allow the dough to rest for 1 hour (1)
The dough should double in size
Mix again
And allow to proof for another hour (2)
dough should be risen and still sticky
Pre heat oven at 250c
Place Dutch oven pot or cast-iron pot with lid on to heat
Place a cast-iron pot with lid on to heat
Knead dough one more time (3)
Place shaped dough in hot pot
Cut a few marks on the dough and dust with more flour
Cover the pot with lid
Bake for 30 minutes lid on
Then 15 minutes lid off
Allow to cool on a wire rack for 15 minutes before serving
